Absolute family favourite.
Vegetable side dish.
It has 3 ingredients only, and a little cooking oil.
(we use grapeseed and ghee, as we're eating a reduced salicylate diet)
Recipe
1/4 pumpkin
2 small turnips
1 whole leek
oil to fry
Wash vegetables (especially the leek) and slice very thinly.
Heat your chosen oil in a large frying pan.
Cook vegetables over a medium heat, turning regularly to avoid burning (be gentle - the pumpkin is very soft)
It takes about 15 mins to cook.
Season if you prefer and serve hot.
