Another of the recipes that, in these cooler months, keep my family warm and nourished.
Rice pudding has often been cooked for me by my own Mama, who grew up in West Yorkshire, England.
Rice Pudding
1 cup medium grain rice
3 whole cloves
1/2t mixed spice
pinch freshly grated nutmeg
3 cups milk
1T maple syrup
1 can evaporated milk
Heat the oven to 180 degrees
Put all ingredients (excluding the evaporated milk) in a casserole dish that has a lid. Stir to combine.
Cook in the oven, covered, for 1/2hr. Remove from the oven and stir.
Return to the oven with the lid off.
Check periodically until all of the rice is cooked and milk completely absorbed.
Take from oven. find and remove the 3 cloves. Stir in a full can of evaporated milk.
Re-cover and rest for 10mins before serving.
Add jam, syrup, sugar, more milk or fruit to taste.
Our favourite addition is raspberries and passionfruit together.
