Apple muffin recipe - our gluten free sugar free Apple Muffins

On a Sunday, we like to slow things down when we can.
And this Sunday was so beautiful, the sky so blue, the air so warm, 
we were feeling extra motivated to get things done.
So now I'm all caught up on the washing, 
our pets are enjoying a bit of sun (hermit crabs), 
we've baked and now we can sit down to do some family craft.
Today it's making Winter window stars and suns from Kite Paper.

We prefer to avoid gluten and sugar when we can, 
but love our sweet treats.
So I am sharing this morning's muffin recipe, 
as they turned out so very deliciously.

Gluten free Apple Muffins - sugar free
1 1/3cups Gluten free flour (our combination is equal parts of ground organic red lentil, mung bean, buckwheat and millet grains)
1Tblspn baking powder (the healthy one!)
1/2cup organic Rolled oats 
1cup dried dates, almost covered in boiling water
1tspn  ground mixed spice
1tspn ground cinnamon
75ml Maple syrup
45g butter, melted
1Tblspn milk
2 Eggs (we always choose organic/home grown)
4 small apples, peeled and chopped small


Method
Preheat the oven to 180°C. Place paper cases into a (12) muffin tin.
(*Tip:- a little oil in each paper case, helps release the cake from the case once cooked)
Sift the baking powder, spices and flours into a large bowl. Stir through the rolled oats - 'dry ingredients'.
Heat and melt the butter. Beat the eggs. Blend the dates and water into a paste.
In a separate bowl, whisk together the milk, syrup and eggs - 'wet ingredients'.
Pour the wet ingredients, date paste, melted butter and chopped apples into the dry and stir together until completely combined.
Spoon the mixture into the paper cases, dividing more or less evenly into each one.
Bake for around 20 minutes. Or until they're firm, though spongy in the centre.
Remove from the oven and place on a cooling rack and leave to cool.
Once any of our muffins are completely cool, I seal them in an airtight container and freeze them to take out for snacks and school lunches
