Pear & Thyme Latkes (Gluten Free Potato Pancakes)
1 potato, grated and squeezed to remove liquid
3 eggs, beaten
1 pear, grated
1 shallot, thinly sliced
8 sprigs of thyme, leaves kept, stems removed
1/4t (herbamere) salt
Grapeseed oil & ghee for frying.
Method
Combine all ingredients.
Place spoonfuls of the mix into a hot, oiled pan.
Cook on both sides until golden brown. (rather like pancakes)
Lift onto paper towel to drain off excess oil.
Serve hot.
They are delicious to eat plain, or with pureed pear sauce, or sour cream.
