| Cauliflower Koftas |
Ingredients
1 whole Cauliflower (or equivalent of your favourite vegetables)
1 1/2cups besan flour
1/2t turmeric
1t cumin
1/4t asoefatida
pinch salt
1t garam masala
1t kaloonji seeds (optional)
Finely chop the cauliflower (I used my food processor)
Add all other ingredients and blend until combined.
Don't feel tempted to add any liquid. The moisture in the cauliflower is more than sufficient to hold the mix together.
Shallow fry in spoonfuls, in ghee, until golden brown on each side.
Serve with natural yoghurt or raita (yoghurt/cucumber/mint dip) as a snack, or
with a meal.
They are also delicious with houmous
